Revì wines were founded in 1982 by Paolo Malfer, created after years of testing and trials with which he perfected the production techniques necessary to create a premium sparkling wine.
Member of the Vinity Wine Company, Revì produces only sparkling wines, Metodo Classico, Trento DOC (Trentodoc). The winery sources its grapes from the province of Trentino, which is the southern half of the Trentino Alto Adige region. This region was Wine Enthusiast’s wine region of the year in 2020. Trentodoc, one of the first wines of traditional method recognized in the world, stands out from other Italian sparkling wines with some distinct characteristics. Located in the Dolomite valleys in Italy’s northeastern region of Trentino, the Trentodoc vineyards experience great temperature swings from day to night, giving the wine its pleasantly crisp acidity, according to a press release. These wines also often undergo long periods of contact with the lees, at least 36 months for the Riserva, creating a unique and elegantly complex sensation on the palate. They are complemented by dishes, a plate of cheeses mixed with fried calamari through chicken or grilled fish.
Today, 60 sparkling wine producers are affiliated with the Trentodoc brand and respect its production rules, a press release said. They are responsible for protecting the quality of sparkling mountain wines, produced according to the most demanding standards and controls throughout the production chain.
The controlled designation of origin “Trento” is reserved for sparkling wines made from grapes exclusively from Trentino, mainly Chardonnay and Pinot Nero, but also Pinot Bianco and Meunier, and produced with secondary fermentation in the bottle and prolonged contact with lees. The producers of sparkling wines in Trentino, however, apply even stricter regulations than those stipulated by the production regulations of Trentodoc, which increase the quality of each individual bottle.

Q, For those who are new to the product, what should they know about it?
A, We are a family winery dedicated to the production of Trentodoc for 40 years. The name Revì derives from the toponym where the cellar is located. Revì is a region particularly suitable for wine production, so we call it “Re del Vino” (King of wine) or “Revì”. Each Trentodoc wine that we produce is a “Millésimato”, that is to say it is made with grapes from a specific vintage, because we want to produce the best oenological expression of each vintage despite the uncertainty of the wines. weather conditions.
Q, What grapes do you use in your wines and how old are the vines?
A, The grapes at the base of our Revì are Chardonnay and Pinot Noir from plants with an average age of 20 years. In fact, in recent years, we have increased the surface area of our vineyard by planting new vineyards at different altitudes. Among our vineyards we also have historic vineyards over 50 years old.
Q, What are the challenges and benefits of alpine winemaking at 3,000 feet?
A, To produce our Paladino and Cavaliere Nero Reserves, we have selected the highest altitude vineyards, respectively at 700 and 600 meters above sea level. At these altitudes, the well-exposed vineyards offer us great aromatic richness, structure and freshness. The grapes from these sites therefore allow us to create the great basis for these Revì Trentodoc which will age and ripen over time.
Q, What are the winery’s sustainability initiatives and what effects do you see climate change having on the vines?
A, We have always believed that respect for nature and the environment is fundamental, hence the Paladino project, the first organic Trentodoc that wanted to emphasize with sustainable packaging as well as with agricultural and winery practices, the possibility of combining quality and beauty with environmental awareness.
Resorting to agronomic practices that are increasingly attentive to the environment, such as mechanical weeding and the management of a short supply chain, leads us to a commitment that will see us more and more involved in the years to come. When it comes to climate change, we are very lucky because we live in an Alpine mountainous region. The territory allows us to climb to the top and discover new territories and overcome new challenges. In recent years I must say that I have also found great quality in the vineyards downstream, certainly thanks to the mountains which have a positive influence throughout the Trentino region.
Q, How has the winemaking part evolved since you made wine?
A, With my brother Stefano, we represent the second generation of the Revì winery and while seeking continuity with the philosophy that has been transmitted to us by our father, Paolo, we try to pay more and more attention to the evolution of the raw material, the grape.
Let’s say that from the start we went a bit against the grain, in fact already in 1983 we produced a Zero Dosage with balanced acidity and low sulfur content. [this was a personal need of my father]. Today, faithful to the marked territorial identity of the production of Trentodoc, not mediated by any particular refinement or cellar development, we focus on the enhancement that time gives to the wine after disgorging.
Last year, for example, we presented “Blasè”, a Zero Dosage selection, which is “indifferent to time” (Blasè means “indifferent”), to indicate a sparkling wine that does not lose its balance over time. but rather improves with tertiary notes of toasted, spicy and enveloping aromas.
6. Talk about the regional traditions of the winery.
The traditions are to be found precisely in the classic method of making sparkling wines, in the use of Chardonnay and Pinot Noir, in the manual processing of the grapes from pruning to harvest. Effervescence is the second life of wine after vinification.
