Vino Vargas launches the 2021 harvest

Beginning of the sparkling grape harvest

– Sparkling wine producer Vino Vargas launched the 2021 harvest season with a morning picking of its Pinot Noir and Chardonnay grapes. The harvest began in the first light of day and in crisp 55-degree weather with a touch of morning coastal fog.

Sparkling grapes are picked three to four weeks earlier than grapes for still wine due to the need for higher acidity and low sugar content. The harvest of sparkling wines marks the start of the season. “The quality of the grapes is really exceptional and 2021 is going to be a great vintage,” said Pedro.

Vargas winemaker. “A slow, warm growing season is reflected in the concentrated flavor profiles and is ideal for our sparkling wines,” added Vargas. Sommelier Vicky Vargas ceremoniously marked the occasion by slashing a bottle of Vargas Paso Doble sparkling wine, sprinkling it on the grapes, and then sharing it with the harvest team. “This is such a special time for us and we are grateful that nature and our wine team have brought us to this point,” said Vicky. The name Paso Doble derives from the origin of the grapes, Paso Robles, and the double fermentation (Doble, Spanish for double) required to make sparkling wine the traditional way. Chardonnay, a clone 38 sparkling wine, comes from the Chris vineyard. Pinot Noir, a 73.1 clone sparkling wine, comes from the Hortencia vineyard. The two blocks of the estate, named in honor of the couple’s late mothers, were planted with plant material native to France from the famous champagne house Perrier Jouet and originally imported by Mumm from Napa County.

After harvesting, the whole bunches are placed in a pneumatic press and over a period of about two hours the juice is gently squeezed. Each grape variety is pressed separately and passes through individual vats to be fermented into base wine for the traditional “Method Champenoise” production used by Vino Vargas.

Vino Vargas is part of a small group of producers who make their sparkling wines on site and using the traditional method. Tastings and cellar tours are available by appointment. The harvest season runs until October and is a great time to visit the Paso Robles wine region.
